Should I pick the louder violin or the softer, but sweeter one?

Bridges can be cut down very easily and cheaply. Don't let that prevent you from buying a good instrument. I think you should go with your teacher's judgment on this one. With practice you can learn to make a powerful violin sound sweet, but you won't be able to get more power out of a soft one.
